Books for HQ Video Streaming?

I'm interested in learning how services like Twitch, Youtube etc. process videos, and in general how video processing works. Any books would be really appreciated.
these services are most likely using off the shelf code to do it. They may have reinvented something or customized it a bit, but most likely they have dedicated compression and decompression hardware and some fast disks and fast networking etc. Probably not a lot of handwritten code in the heavy lifting areas.

What exactly do you want to know? Video processing is a huge topic, and it can get PHD level math heavy in a hurry when you dig into the algorithms and books. Compression? Some sort of post processing? Capture and playback? Recognition / 'understanding' the stream? High performance?
