How to make the game is merely a matter of personal preference and style. What kinds of games have you made before? How much do you know about physics/math? Have you ever done a platformer before? If I knew these I could help you more.
Fancy Pants doesn't load for me. The link it says to click if it doesn't load doesn't do anything.
Fancy pants is alright. Though I have yet to play a flash platformer that doesn't feel "messy".
